I can point out quite a lot of things that make me happy. Cooking is one of them. Even though I’m not the greatest chef out there it’s something I really enjoy doing. It just makes me happy to make something from scratch and I obviously love to eat, so it’s a win win!
Therefore, since I started this blog, I knew I would like to incorporate some cooking related posts once in a while. Today is the day. And i know I should have started with a recipe of my own – or maybe a healthier one – but this one is too delicious to wait! It’s the perfect marriage between a pizza & a quesadilla: a pizzadilla.

I found this recipe through bloglovin and I instantly decided I would have to give it a try. A marriage between a pizza & a quesadilla? I’m all for that!
The recipe I followed is from the blog The Iron You which I already added to my feed since it has some delicious looking recipes with healthy twists. It even has a cauliflower crust recipe to make your tradicional pizza a little bit healthier & which I’m totally going to give it a try!
The recipe is quite simple & quick to make. And I assure you it’s totally worth it after the first bite! Here’s the ingredients to make one pizzadilla:
– olive oil
– 1 garlic clove
– tomato paste
– a pinch of salt & pepper
– a couple of basil leaves
– 2 tortillas
– mozzarella cheese
– parmesan cheese
– toppings of choice (mushrooms in my case)
Heat a bit of olive oil in a sauce pan and add the garlic clove cut in small pieces. As soon as it starts sizzling, add the tomato paste, salt & pepper to taste and the basil leaves. Let it cook for about 10 minutes until it thickens. Remove the basil leaves and the sauce is ready!
Preheat the oven to 200º, the top broiler on. Heat a pan in low heat and add the first tortilla. Spread half of the marinara sauce & sprinkle half of the mozzarella. Place second tortilla on top and let it cook for about 2 minutes or until the bottom gets crisp. Then, flip it with a spatula, add the rest of the sauce as well as your toppings (i kept it simple with only mushrooms) & add the rest of the cheese on top. Place it under the broiler for a couple of minutes until the cheese goodness is all melted.
